BAKERY MANAGER
Reports to: Head of Bakery
Job Purpose
The Bakery Manager: Store Operations is responsible for the coordination of the bakery operations in stores to ensure the production of quality products within the set hygiene, quality, and cost standards, to support the achievement of the store objectives on Bakery profitability.
Duties & Responsibilities
- Develop winning bakery recipes that consider market and competitor trends
- Coordinate the daily baking process as per the approved recipes to ensure timely, cost, and quality conscious production
- Implement the customer service plan for the Bakery session to ensure timely and quality response to customer queries and concerns
- Monitor the implementation of the bakery processes, policies and procedures to ensure gaps are identified and addressed in a timely manner
- Contribute towards the review of Bakery standards, and coordinate the daily implementation process to ensure zero noncompliance
- Provide input into the development of the bakery budget to ensure sufficient resource allocation for the successful implementation of the bakery plans
- Manage the utilization of resources assigned to support the achievement of the company’s cost management objectives
- Coordinate the purchase, use, and maintenance of all cooking equipment and tools in alignment with the company’s quality and cost management objectives
- Implement the company’s standards on hygiene, safety, quality, and price to ensure zero noncompliance
- Implement employee safety measures for the Bakery staff in alignment with the set regulations and company’s policies and procedures
- Coordinate the development of talent on Bakery competencies to ensure the continuous supply of qualified talent
- Prepare reports on the bakery operations to ensure timely availability of insights required to enhance the contribution of the Bakery Fresh category to the company’s profitability objective
- Contribute to the marketing strategy for the Bakery Products, and participate in the actual implementation process to promote upselling opportunities for value-added products or cross merchandising
- Requisition for bakery ingredients to ensure timely provision for successful implementation of the baking plans
- Identify opportunities for the enhancement of existing products, or the addition of new product lines to support the positioning of the company in the market on Bakery products
- Implement and maintain the required food safety standards in terms of hygiene, housekeeping, and product safety to ensure the business is protected from risks associated with non-compliance
Minimum Qualifications
- Relevant bachelor’s degree in culinary management from a credible institution
- Diploma in Food & Beverage/Food Production/Management
- Over 5 years of experience in food preparation, with focus in baking, and two years of experience at a supervisory level
